Some of the duties of the role: Working closely with the Executive Head Chef to ensure the Pastry Department high standards are maintained at all times To be fully familiar with HACCP and ensure that the section conforms to the legal guidelines highlighted within these regulations. To oversee a large team of pastry chefs on a daily basis and be able to lead by example but also to delegate and prioritise what needs to be done To innovate and create unique culinary experiences to delight our guests. To conduct training with all kitchen team members and ensure compliance to hygiene, health and safety policies and procedures. To ensure that the kitchen head count and labour costs are kept within the budgetary levels set and to adjust accordingly in line with business levels.
