Collaborate with the Head Chef to curate and regularly review an exceptional food and beverage menu, featuring signature dishes, cocktails, and premium spirits. Develop and implement innovative strategies to increase revenue and profitability while maintaining excellence. Inspire, mentor, and train your team to excel. Create a strong team culture through continuous education and development programs. Manage budgets, control inventory, and maintain supplier relationships to ensure seamless operations. Oversee cash handling, card transactions, banking transactions, and sales reporting, while tracking expenses and optimising profitability. Draw up staff rosters within allocated budgets, ensuring the right balance for smooth operations. Ensure all hygiene standards are upheld, regularly updating checklists and maintaining a clean and safe environment.
