Sous Chef

Restaurant Name: Johnny Jugnu Limited T/A Cafe Velo

Location: 3 Georges Quay, Cork, Ireland, T12 KD37

Key Responsibilities:

  1. Oversee all operational aspects of the Kitchen and staff in the absence of the Head Chef.
  2. Maintain a safe and hygienic kitchen environment and ensure all HACCP requirements are met.
  3. Manage the purchasing and storage of food.
  4. Minimize stock usage, wastage, loss, and breakages in the kitchen, and record accordingly.
  5. Ensure all relevant records are complete and accurate.
  6. Complete cleaning and maintenance of restaurant machinery and equipment in line with the Kitchen Cleaning Schedule and Kitchen Period Checklists.
  7. Support kitchen operations effectively.
  8. Lead by example in excellent food production.
  9. Assist the kitchen operations along with other team members.
  10. Mentor skilled and ambitious culinary staff.
  11. Support the Head Chef in their duties and occasionally deputize in their role.
  12. Plan menus.
  13. Design staff shift schedules.
  14. Manage workflow in the kitchen and liaise with wait staff to ensure customers receive orders promptly and correctly.
  15. Participate in the hiring process for new chefs.

Key Requirements:

  1. 4-5 years' experience in a busy kitchen operation.
  2. Experience in managing personnel, inventory management, and HACCP.
  3. Desire to provide a consistently high standard of customer service.
  4. Strong teamwork abilities.
  5. Problem-solving abilities and a high level of administrative knowledge.
  6. Ability to communicate in English.
